The buds are sprouting, the wind is passing, the showers are here, but the sun finally warms our skin when it shows its face - Spring is just about upon us. With the turning of the weather and the emergence of nature's dormant colours, we welcome an abundance of new foods and flavours in our grocers and on our plates: wild garlic, asparagus, cucumber, and fresh herbs grace our recipes. As our food changes, our wine posture changes too, we crave whites that lean fresher, with mineral, citrus edges to accompany the lighter, brighter flavours on our plates. The reds too step away from full-bodied and rich, and tend lighter with freshly-picked berry character alongside dried herbs and minerals. For the Spring case, we have selected our favourite wines to accompany the flavours of the season and Herbs and Wild's delicious food. A rosé making a first appearance too, a darker style from Spain's northwest that captures this time of year perfectly.
