About the wine

The Sauvignon Blanc grapes are estate grown in the village of Soings‑en‑Sologne, at the heart of the Touraine appellation. After harvest, the grapes undergo a 12‑hour maceration to gently extract aromatic complexity before pressing. Fermentation takes place in stainless steel, guided by indigenous yeasts, allowing the vineyard character to speak clearly. The wine is then aged on its fine lees for 12 months, also in stainless steel, adding texture and depth while preserving purity and freshness. The wine is filtered but not fined, ensuring a natural expression of both grape and terroir.
