The Nero di Troia grapes are meticulously handpicked during harvest, ensuring only the finest fruit makes its way into the winemaking process. The initial fermentation takes place in stainless steel tanks, but before it reaches completion, the must/wine is transferred into bottles and sealed. Here, within the confines of the bottle, the wine undergoes its final transformation as residual sugars evolve into alcohol and carbon dioxide.
Puglia is an undeniably warm place to grow grapes, and so many of the wines that come out of the region are ripe in fruit flavours and full in body. In the northern corner of the region, Marco Caiaffa cultivates grapes in a relatively cool area. Amazing coastal breezes and a surprisingly cool soil mean the grapes around his hometown of Cerignola retain lots of acidity for freshness, and the fruit expressions are brighter, less ripe, and even floral. You'll be pleasantly surprised with the elegance and lift to all of the wines from Caiaffa.
Massive proponents of organic farming, Caiaffa employ what they like to call 'synergistic viticulture', encouraging biodiversity, introducing natural predators for pests, and allowing the grapes to thrive with minimal interventions. We could do with more of this around, so thanks Caiaffa for this delicious Pét-Nat rosé.
Elegance, fruit purity, and biodiversity are at the heart of organic Puglian winery Caiaffa, run by the passionate Marco Caiaffa. In Puglia’s northern tip, the climate and resulting wines are quite different from the Puglian norms. Based in the town of Cerignola, in relatively recent times, Caiaffa’s vineyards were completely submerged in water. The mineral rich soils and huge cooling influence from the Mediterranean sea mean that red grapes like Primitivo and Negroamaro express themselves in much a much lighter and more floral manner.
