Manual harvest and selection of the grapes is followed by a gentle whole cluster pressing and clarification of the must (juice) by natural sedimentation; slow fermentation then occurs at a a controlled temperature in stainless steel tanks, followed by aging on the lees in steel tanks for 5-7 months.
A great match with spicy dishes and sweet and sour creations with an Asian touch, fragrant curries, sushi and tempura vegetables.
