Fondo Indizeno is a fantastic new project from legendary winemaking consultant Christian Patat. Using his incredible knowledge and natural talent, he has built a reputation as one of Italy’s top winemakers, working with smaller wineries to develop their offerings and master their crafts. Born in Friuli himself, this is an area he pays special attention to, committed to developing the identity of this land and promoting its potential. Fondo Indizeno Chardonnay is made from old vines (30 years +) from two villages in Colli Orientali del Friuli; Prepotto and Buttrio. The vineyards are farmed using organic methods, though are not certified. In order to maintain the purity of the grape, he vinifies all the wines in stainless steel and ages them on the lees, building upon complexity and depth.
A delicious dry Chardonnay that works well with white fish, chicken, veal, herbs, fresh salads, and soft cheeses. For a winning combination try a traditional Chicken Piccata; the chicken is pounded flat, shallow fried, and served with a citrus, butter, and caper sauce. A match made in heaven!
