As with all of the wines from La Chablisienne, the grapes for this 2018 Bourgogne Chardonnay are pressed by the individual growers before the juice is handed over to the winemakers at La Chablisienne’s winery in the heart of the Chablis village. The wine undergoes a cold fermentation before malolactic fermentation in steel tanks. The wine undergoes fining and filtration before bottling and at least 9 months in bottle before release. La Chablisienne is a pioneering cooperative in Burgundy’s northern-most appellation famed for its finessed Chardonnay production. Over 300 individual growers contribute to the production of thirty different wines, no other producer is able to exhibit such range and diversity within this fascinating terroir.
The Chablis region in northern Burgundy and the exquisite, finessed Chardonnay wines produced therein need little introduction.
