On the nose there are typical crushed stone character, minerality, notes of gooseberry and white peach. The palate has a seamless precision, the fruits dancing with the floral and mineral elements for a delicious glass of wine. On the finish, the poised acidity shines through and you're left with a lingering citrus fruit note. This is an incredible wine of elegance and finesse. François Le Saint Sancerre Silex is made from 100% Sauvignon Blanc grapes, from 25-year-old vines, grown on soils of Kimmeridgian marl and flinty clay. These distinctive soils are perfect for producing superior Sauvignon Blanc wines. Sustainability is of upmost important to François Le Saint, nourishing and protecting the land of their ancestors through organic and biodynamic farming practices. No artificial or synthetic chemicals are used in the production process. Once the grapes have reached optimum ripeness, they are transported to the winery where they are first de-stemmed and then transferred to a delicate press. Spontaneous fermentation occurs in stainless steel through the use of natural yeasts.
