After a cold and slow first fermentation, the wine undergoes a secondary fermentation in steel tanks. The social cooperative Cantina Andriano has been producing wine in this region for decades. The winery is joint owned by its 50+ growers who contribute to and share in the winery's successes. It is thanks to this, along with Marco Caiaffa’s dedication to biodiversity in the vineyard, that Caiaffa claim to be able to produce some of the most elegant and varietally pure red wines in Puglia. They’re certainly some of the best we’ve tasted from a region that is much more famous for its big and powerful wines. The Caiaffa winery, based on the northern coast, prefer a much less extracted style, favouring the light and perfumed expressions of the native Puglian grapes. Organic certified since 2010, Caiaffa cultivate 35 hectares of vines, prioritising biodiversity in their vineyards. All of their wines undergo spontaneous fermentation and they prefer only delicate use of oak, as is the case in this 100% Primitivo wine which spends three months in barrels of different sizes before bottling. They cultivate 35 hectares of vines and the business has been in the family since the '60s. Their vineyards sit at 400m above sea level and the soil  has volcanic remnants, which is why the wines here are so much fresher and more mineral than the Nebbiolo wines found in the Langhe. We are huge fans of the appellations in Alto-Piemonte, they offer such a brilliant introduction to the age-worth wines of Italy. Ghemme needs to be on your list to taste, and you won't find many better than this Ghemme Collis Carelae from Cantalupo. \u003c\/p\u003e\u003cp\u003ePairing this wine is such a pleasure, the earthy flavours partnered with the fresh backbone and juicy fruits open it up to so much.
